I first tried æbleskiver - traditional, spherical Danish pancakes - during my semester abroad in Copenhagen. The light and fluffy pancakes are a delicious treat, and are most popular during the holiday season.
My family loves these mini Danish treats. We follow my great-grandmother's recipe (similar recipe here), but fill the pancakes with anything from jam to chocolate chips to bacon.
