Homemade Pumpkin Spice Chocolates


I was recently brainstorming ideas for a sweet fall treat that's a bit more sophisticated than the traditional spider web cupcakes and candy corn.

My thought process went a little something like this: 
Fall...
Halloween... 
Candy...
Pumpkin, Pumpkin, Pumpkin!... 
Pumpkin Spice Chocolate

Here's the recipe:

Pumpkin Spice
1 part ground cloves
1 1/2 parts nutmeg
1 1/2 parts allspice
2 parts cinnamon

Pumpkin Spice Chocolates
1 cup dark chocolate chips
1/2 tsp. pumpkin spice
chocolate mold

Melt the chocolate chips in a double boiler on the stove.
NOTE: Patience is key when melting chocolate.  Melt over low heat, stirring often once chips appear shiny and begin melting.  If you heat the chips too quickly (ie. melting them in a microwave or using too much heat on the stove), the fats in the chocolate will separate and your chocolates will have unsightly white splotches once cooled.

Once the chocolate is melted, remove from the double boiler and add pumpkin spice.  Stir until thoroughly mixed.  

Pour chocolate into a plastic bag.  Snip off one corner and squeeze chocolate into mold.  Bump mold on tabletop a few times to remove any air bubbles.

Let mold sit until chocolate is set, about 12 hours.

Pop chocolates out of mold and enjoy!
