Homemade PBJ Sandwich Cookies

My dad loves peanut butter and jelly sandwiches more than anyone I have ever met.  I stumbled across this adorable sandwich cookie months ago, and I knew instantly that I'd have to make some for Dad.  Father's Day seemed like a perfect opportunity to whip up a special treat for such a special man.


The sandwich cookies are made by spreading peanut butter and jelly on sugar cookies shaped like slices of bread.  I used a fantastic classic sugar cookie recipe from Rosie's Bakery's Cookie Book, the best cookie cookbook ever.

Classic Sugar Cookie
2 1/4 c flour
1/2 c sugar
1/2 c confectioner's sugar
1/8 tsp baking soda
1/8 tsp cream of tartar
1/2 tsp salt
12 1/2 T unsalted butter
1 egg
1 T vanilla extract

Place the flour, sugars, baking soda, cream of tartar and salt in a food processor and process just until mixed.

Cut the butter into small pieces and distribute over the flour mixture.  Process until the dough resembles coarse meal (about 30 seconds).

Stir the egg and vanilla together in a cup.  With the processor running, pour the egg mixture through the feed tube and process until the dough comes together (about 30 seconds).

Remove the dough from the processor, place it on a work surface, and knead it for several seconds.


Form the dough into a rectangular log.


Gently press indentations into the sides and top of the log 
to create the shape of a loaf of bread.



Wrap the loaf in plastic and refrigerate for one hour.

Once the loaf has become firm in the refrigerator, 
slice the loaf into 1/8 inch thick slices. 


Place the slices on cookie sheet covered with parchment paper 
or a silicone baking pad and bake for 12 minutes at 375 degrees.


The cookies are finished baking when the 
edges are slightly golden.



Spread the cookie slices with peanut butter and jelly and enjoy!
